Savoury Bajra or Pearl Millet Bites

Of late I have been more inclined towards healthy baking. Trying new healthier versions, quite interesting and fun. A healthy munching keeps self-satisfied for hours. Pearl millet or bajra has umpteen health benefits. It is rich in insoluble fiber which aids in digestion. Research studies have shown that Bajra has anti-cancer and anti-tumor properties. Ginger and garlic add an extra special flavour to the foods. They have many uses outside the kitchen to treat many ailments. Ginger and garlic remain in the diet of many health-conscious individuals. I have added coconut butter which is a healthy fat that helps to assimilate fat-soluble vitamins like A, K, and E. Adding turmeric has curcumin compound which helps to prevent heart disease. Curry leaves enhance aroma and striking taste. Adding carrom seeds, cumin, asafoetida aids digestion. Sesame seeds are a storehouse of iron, folic acid and help to prevent iron deficiency and boost your energy.

The only time to eat diet food is while you’re waiting for the steak to cook.

Savoury Bajra Bites

Ingredients

  • 1 cup Pearl Millet/ Bajra flour
  • 1tbsp Ginger Garlic paste
  • ½ tsp Black Pepper
  • ¼ tsp Turmeric
  • A handful of fresh coriander
  • 1 string Curry leaves
  • 3 tbsp Coconut butter or Cold-pressed Groundnut oil
  • 1tbsp Sesame seeds
  • 1/4 tsp Cumin Seeds
  • 1/3 tsp Carrom seeds
  • 1/4 tsp Asafoetida / Hing
  • 1 tbsp Red chilies powder
  • 1 tbsp Himalayan Pink salt
  • 1/4 cup water

Instructions

  1. In a blender or mixie grinder.
  2. Add Black Peppercorn, Ginger Garlic Paste, Coriander, and Curry leaves
  3. Blend with water  and set aside
  4. Take a bowl to add bajra flour with coconut butter, salt.
  5. Mix is really well. It should have a coarse texture.
  6. Add turmeric. Slightly crush carrom seeds in your hand then add to incorporate the flavor,Asafoetida, sesame seeds, red chilli powder, and salt.
  7. Mix and knead into a dough.
  8. Rest the dough for 30mins
  9. Once the dough is ready to knead well
  10. Place it on parchment paper. Divide the dough into small balls.
  11. Press the ball into a disc. Use a cookie cutter or jar lid to form rounds
  12. Prick the crackers with a fork in order to avoid the dough to rise.
  13. Bake in a Preheated  oven 180 C for 15-20 mins
  14. Till turn slightly golden and crisp
  15. Inbetween check  the crackers to flip over till it bakes for remaining
  16. Cool down to room temperature
  17. Crunchy Bajra crackers ready to serve.
  18. Store into a glass airtight container stays crispy up to a month
